Rui ate Subaru's memories, but as she explained his memories of death are not as fresh as the real thing. It's the difference between viewing an experience and living the experience. So she doesn't understand how horrible death is. She thinks it's not a big deal, and may even be a new frontier of flavors to indulge in. She also wants RBD. A big thing cut from the anime was Rui's characterization of how she envies other people that live their lives haphazardly. They get to have bodies but they waste their lives, make mistakes, they waste the privilege of having a body and she resents that. She believes they are all idiots and she could do better at life than any of them. What she wants is the perfect life, a life she believes she achieve if she manages to steal RBD. Again because she doesn't understand that death is hell, she enacts this plan to try and steal RBD. The plan is fairly simple. Split herself and as a witch factor enter Subaru, from there do many mean things to drive a wedge between Natsuki Subaru and 'Natsuki Subaru' so he sufficiently differentiates from himself. From there, she hopes to devour the new identity that has separated itself from 'Natsuki Subaru', empty him out and become Natsuki Subaru, thus acquiring RBD. Unfortunately for her. Subaru is a monster and what was originally a joyride taking RBD for a spin, became a kind of hell i don't think she had a way to escape from. So in a way i think she was trapped and couldn't bail once she figured out that Subaru won't break and also RBD is a hellish ability. She no longer wants it. When Subaru reconnected with himself and stripped Rui away, she had no intention of going back. Her desire of "I want to become happy" had been completely transformed into "I don't want to die". The kicker here, is that these memories of RBD are real ones. These are her own memories she's earned of RBD from within this body. It's not like the meals of memories she's devoured that she can curate and get rid of if she so wished. She cannot get rid of these personal experiences of death. That's what Subaru meant by her not running away from her memories. Subaru basically threatened her with not saving her, cutting off her ties out of here by murdering her brothers, and leaving her here alone with just her memories of death that she can't get rid of. Cold as fuck, but deserved.

She can't readily become him is the issue. The goal of her strategy is to create the situation where that is possible. Think of it like this, she wants him to differentiate from himself so she can eat him again, this time hopefully completely, then hollow him out and from the inside the empty shell solar eclipse to become him. Rhen she finds subaru and discovers RBD and thinks she can make her life perfect if she can just redo anything she dosnt like but needs a ways to steal it from subaru and her plan was if she could separate the new subaru from the old this new person separately from Subaru is a valid target to eat and she could then take that new life for herself.

I may be wrong here so please correct me if so. She wanted to inherit his Authority. Normally, Witch factors/Authorities only transfer to specific people, such as Subaru who can just collect em all like pokemon. For context, Rui does not have a body, her soul resides in the Corridor of Memories. Her brothers send her memories because despite their insane evil personalities, they still care deeply about her and want her to have them. Her idea was to split her soul in two, one would piggyback onto the amnesiac Subaru's soul while the other would stay in the Corridor of Memories and manipulate the situation as needed. The goal would be to break Subaru down mentally and spiritually, then take over the empty physical husk so they could steal RbD. The Piggybacking Rui experienced every death, and found out the hard way that it really fucking sucks and that she would do anything to avoid death Then when they encountered each other, the Rui with no experience with death thought the other one was hogging it for herself, and thats when the fight between them breaks out.

Rui Arneb initially tried eating Subaru, but it didn't... quite 'go down the hatch' (I presume due to his Earth memories not sitting well with this world) Once she learned of RbD, she thought it would be perfect for herself, so she finished her meal by splitting herself (she's just a soul and never had a physical body) and the 'Other' Rui ate Subaru. Then using Solar Eclipse to transform into 'Natsuki Subaru' putting herself in the hole inside Subaru's Soul created from the loss of his memories and experience by the Authority of Gluttony. It's why the Witch of Envy often killed Subaru in the previous loops, she just couldn't exactly kill Rui because she was nested within his soul rather than Petelgeuse invading his body with a distinct soul.
